Aponte is a small village and indigenous reservation of the Inga people who have become known for their unique expertise of honey processing, which is relatively uncommon in Colombia. At 2100 masl in the Juanambu Canyon, Aponte Village is in the municipality of Tablón de Gomez, northeast of the department of Nariño which was the northernmost point of the Inca empire in the 15th century. As a part of the honey process, the coffee in Aponte is picked ripe, de-pulped, fermented with the mucilage still on, then placed inside parabolic dryers when the fermentation process is complete. The high altitude and strong cold winds in this region make for denser, homogenous coffees that dry relatively quickly.
