The Nemba Washing Station is located in the Kayanza Province in the northern part of Burundi which has the reputation of being one of the best coffee producing regions in the country. The volcanic soil, hilly terrain, high altitude, and plentiful rainfall make for ideal conditions for growing high quality Arabica coffee. Because of the high altitudes, the coffee cherries are some of the last to ripen during the season and produce coffees that are known for their higher acidity and fruity sweetness.
The coffee from the Nemba Washing Station is collected from over 2600 farmers in surrounding communities, with each farm usually having 200-300 trees on 1 to 2 hectares of land. These family-owned micro plantations known as ‘collines’ (which is translated as ‘hills’ in French) only grow arabica coffee plants of the Red Bourbon variety for quality reasons.
Once the coffee cherry is delivered to the washing station, they are floated first then hand sorted to pick out the higher quality cherry - being sure to remove all the damaged, under ripe, and over ripe cherries. The cherry is then depulped within 6 hours and set under water to ferment for 10-12 hours in which trained agronomists watch over the fermentation, ensuring it is halted at the perfect time. Once complete, the coffee is run through washing and grading canals in preparation for the drying process. The coffee is then transported to raised drying beds where it is dried for 14 to 21 days until the coffee reaches the ideal 11.5% moisture content.
