YirgZ gets its name by combining Yirgacheffe + Zero, the renowned coffee growing region where it’s produced and the rigorous sorting process the workers implement to ensure “zero” defects. This coffee is grown at high altitudes around 2000-2200 masl then processed at the Awoli Musa Salatu washing station where it is then dried on raised beds for 15-20 days, rotated often to ensure even drying. The extensive sorting process for this heirloom variety takes up to 3 times longer than conventional coffee but the workers are shown appreciation for their hard work by being compensated with wages three times higher than average. This extra income helps the workers support their community and send their children to school, which highlights the importance of specialty coffee premiums and direct trading practices.
