Grown in the high-altitude hills of Nueva Segovia, this standout lot comes from PRODECOOP which is a dynamic cooperative of over 2,300 smallholder farmers dedicated to both quality and community impact. Cultivated at 1,250–1,350 meters in nutrient-rich soils, the cherries (a mix of Bourbon, Caturra, Catimor, and Typica) are handpicked at peak ripeness, then fully washed and fermented in open-air tanks for 8–12 hours to develop clarity and sweetness. This coffee results in a cup that opens with mild stewed fruit and soft florals, layered with pecan-like nuttiness, and bright tart acidity. Each sip reflects the co-op’s commitment to sustainability, with every bag supporting programs like women’s health initiatives, education, and food security for farming families. This lot is a beautiful expression of Nicaragua.
