This traceable community lot comes from the pioneering women members of CESMACH Cooperative, a group producing certified Fair Trade Organic coffees in the highlands of Chiapas. Grown in the lush buffer zone of the El Triunfo Biosphere Reserve which is Mesoamerica’s largest cloud forest. These heirloom cultivars thrive under dense shade canopy in volcanic-rich soils, contributing to the coffee’s layered acidity and clean finish. Ripe cherries are selectively hand-picked and undergo traditional washed processing: depulped on the day of harvest, fermented in tanks for 12–18 hours, then fully washed to remove mucilage before being sun-dried on patios or raised beds to optimal moisture. More than just a beautiful cup, this lot reflects a remarkable grassroots movement empowering women to own and manage their farms, invest in community health programs, and preserve sustainable growing practices for generations to come.
